Classic Baked Yams

Fluffy, buttery yams whipped with warm spices and baked until lightly browned. Easy to prep in advance, and perfect for a crowd.

  1. Preheat oven to 400°F. Generously grease an 8–9 cup soufflé dish. Make a 2-inch slit in the center of each yam and bake until soft, about 1¼ hours. Remove from oven, reduce oven to 350°F, and let yams cool ~20 minutes. Halve lengthwise, scoop pulp into a bowl, discard skins.
  2. Add butter and spices (all except parsley) and beat until smooth and fluffy. Taste and adjust seasoning. Spoon into soufflé dish and dot with a little extra butter if you like.
  3. Bake uncovered until top is lightly browned, about 1 hour.
  4. To serve: sprinkle with minced parsley.

Make-ahead: Can be prepared up to 4 days ahead. Cover and refrigerate; bring to room temp before baking.
